{"id":1238,"date":"2017-05-30T18:50:34","date_gmt":"2017-05-30T16:50:34","guid":{"rendered":"http:\/\/ptitedukanette.fr\/?p=1238"},"modified":"2017-11-01T22:48:31","modified_gmt":"2017-11-01T21:48:31","slug":"brioche-boulangere","status":"publish","type":"post","link":"https:\/\/dukanette.fr\/?p=1238","title":{"rendered":"Brioche boulang\u00e8re"},"content":{"rendered":"<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1239 aligncenter\" src=\"http:\/\/ptitedukanette.fr\/wp-content\/uploads\/2017\/05\/brioche-boulangere-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/dukanette.fr\/wp-content\/uploads\/2017\/05\/brioche-boulangere-300x225.jpg 300w, https:\/\/dukanette.fr\/wp-content\/uploads\/2017\/05\/brioche-boulangere.jpg 480w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<ul id=\"ingredient\">\n<li><b>Pour la brioche\u00a0:<\/b><\/li>\n<li>120g de son d&rsquo;avoine<\/li>\n<li>90g de gluten de bl\u00e9<\/li>\n<li>La quantit\u00e9 de levure recommand\u00e9e pour 500g de farine de bl\u00e9 de 9g,\u00a0 sachet de 11g levure instantan\u00e9e de boulanger<\/li>\n<li>2-3g de sel fin<\/li>\n<li>2 sticks Canderel vanille<\/li>\n<li>10g d&rsquo;eau fleur oranger (1 cs)<\/li>\n<li>L&rsquo;\u00e9quivalent de 70-80g de sucre en \u00e9dulcorant en poudre<\/li>\n<li>2 oeufs calibre moyen (environ 50-52g par oeuf, sans coquille)<\/li>\n<li>2 petits suisses 0% (ou 100g de fromage blanc 0%)<\/li>\n<li>50-60ml (g) de lait \u00e9cr\u00e9m\u00e9<\/li>\n<\/ul>\n<p>Casser les oeufs au centre du m\u00e9lange sec, puis d\u00e9poser dessus un petit suisse \u00e9goutt\u00e9 (ou maximum 50g de fromage blanc).<\/p>\n<p>Faire chauffer l&rsquo;eau de fleur d&rsquo;oranger additionn\u00e9e de 20ml (g) de lait (ici\u00a0: au micro-onde, 25s \u00e0 800w). Ajouter alors le lait parfum\u00e9 sur le petit-suisse\/oeufs en le versant bien au centre, surtout pas sur le m\u00e9lange sec ou sur les parois du bol\u00a0!<\/p>\n<p>P\u00e9trir \u00e0 vitesse minimum jusqu&rsquo;\u00e0 la formation d&rsquo;une boule. Rester vigilent pendant cette \u00e9tape, et, au besoin, ajouter du son d&rsquo;avoine sur les parois du bol, pinc\u00e9e par pinc\u00e9e, pour \u00e9viter que la pr\u00e9paration ne commence \u00e0 coller aux parois du bol avant la formation de la boule. Il peut \u00eatre utile de guider le m\u00e9lange vers le crochet p\u00e9trisseur \u00e0 l&rsquo;aide d&rsquo;une spatule en silicone, ou d&rsquo;aider \u00e0 ce que la boule se d\u00e9colle des parois en la repoussant vers le crochet<\/p>\n<p>Pendant ce temps, chauffer le reste du lait \u00e9cr\u00e9m\u00e9 (ici\u00a0: au micro-onde, 35s \u00e0 800w).<\/p>\n<p>Une fois la boule form\u00e9e, prolonger le p\u00e9trissage jusqu&rsquo;\u00e0 ce que les parois du bol soient s\u00e8ches et (presque) sans r\u00e9sidus. \u00e0 ce stade, si la boule se d\u00e9lite et colle trop aux parois du bol, arr\u00eater le robot, r\u00e9unir la p\u00e2te en une boule, puis rajouter 1 cs de lait chaud sur les parois du bol. Red\u00e9marrer le p\u00e9trissage et aider la p\u00e2te \u00e0 se d\u00e9coller \u00e0 l&rsquo;aide de la spatule en silicone. Ajouter une autre cs de lait si besoin. On ne passera \u00e0 l&rsquo;\u00e9tape suivante que lorsque la boule sera bien form\u00e9e, et aura acquis une texture suffisamment \u00e9lastique pour supporter l&rsquo;ajout d&rsquo;ingr\u00e9dients sans se d\u00e9lite<\/p>\n<p>\u00c9goutter le second petit-suisse (ou prendre le reste du fromage blanc) et l&rsquo;ajouter en trois fois, cs par cs (pas tout d&rsquo;un seul coup\u00a0!). P\u00e9trir longuement avant de rajouter une autre cs, de fa\u00e7on \u00e0 ce qu&rsquo;il n&rsquo;y ait plus aucune trace visuelle de petit suisse dans la boule de p\u00e2te, et que les parois du bol soient s\u00e8ches et (presque) sans r\u00e9sidus (afin de conserver la texture \u00e9lastique de la boule de p\u00e2te<\/p>\n<p>Ajouter alors alternativement le lait chaud cs par cs (pas tout d&rsquo;un seul coup\u00a0! Pour moi, c&rsquo;est 40ml en g\u00e9n\u00e9ral) et le reste du son d&rsquo;avoine, pinc\u00e9e par pinc\u00e9e, en p\u00e9trissant entre chaque ajout jusqu&rsquo;\u00e0 ce que les parois du bol soient s\u00e8ches et (presque) sans r\u00e9sidus. La boule de p\u00e2te s&rsquo;assouplit \u00e0 mesure qu&rsquo;on ajoute du lait. Il faudra en ajouter jusqu&rsquo;\u00e0 obtenir une p\u00e2te souple et douce au toucher, mais pas trop humide. Terminer par du son d&rsquo;avoine.<\/p>\n<p>Une fois tous les ingr\u00e9dients incorpor\u00e9s, p\u00e9trir encore 10-15 minutes. Au besoin, ajouter les zestes d&rsquo;agrumes s\u00e9ch\u00e9s dans les 5 derni\u00e8res minutes de p\u00e9trissage.<\/p>\n<p>Prolonger le p\u00e9trissage \u00e0 la main pendant quelques minutes, puis rouler en boule, et faire reposer la p\u00e2te \u00e0 temp\u00e9rature ambiante dans le bol utilis\u00e9 pour le p\u00e9trissage, recouvert herm\u00e9tiquement de film alimentaire, pendant 30-45mn. La p\u00e2te va doubler de volume normalement.<\/p>\n<p>Couvrir la future brioche d&rsquo;un torchon humide et laisser lever (ici\u00a0: 45mn environ) dans le four \u00e9teint, le temps que la p\u00e2te double, voire triple de volume.<\/p>\n<p>Sortir du four, et le pr\u00e9chauffer \u00e0 200\u00b0, chaleur traditionnelle.<\/p>\n<p>Dorer la surface de la brioche au jaune d\u2019oeuf m\u00e9lang\u00e9 \u00e0 1, 5cs d&rsquo;eau froide (ou au lait), \u00e0 l&rsquo;aide d&rsquo;un pinceau de cuisine. Filmer la brioche (j&rsquo;utilise le film qui \u00e0 servi pour le premi\u00e8re lev\u00e9e) le temps que le four arrive \u00e0 temp\u00e9rature, puis \u00f4ter le film pour la cuisson.<\/p>\n<p>Enfourner pour 25-30mn, en ayant r\u00e9duit la temp\u00e9rature \u00e0 180\u00b0 une fois la brioche enfourn\u00e9e. Surveiller la brioche pour qu&rsquo;elle soit joliment dor\u00e9e.<\/p>\n<p>D\u00e9mouler d\u00e8s que possible, et laisser totalement refroidir avant d\u00e9gustation. La brioche va se ramollir une fois ti\u00e8de, puis se raffermir \u00e0 nouveau une fois froide<\/p>\n<p>Bon \u00e7a c&rsquo;est la version originale, moi j&rsquo;ai tout mis dans la machine \u00e0 pain et laisser lever en mode p\u00e2te et \u00e7a va tr\u00e8s bien et ensuite cuire au four comme indiqu\u00e9 le robot aussi tout dedans \u00e7a va bien aussi !!<\/p>\n<p>&nbsp;<\/p>\n<p>Pass\u00e9 ce d\u00e9lai, d\u00e9gazer la p\u00e2te, puis la p\u00e9trir \u00e0 nouveau \u00e0 la main pendant quelques minutes, en la roulant en boudin, puis en repliant les bords vers le centre, avant de rouler en boule. Renouveler l&rsquo;op\u00e9ration de nombreuses fois. Il faut p\u00e9trir jusqu&rsquo;\u00e0 obtenir une p\u00e2te souple, moelleuse et douce au toucher. Elle ne doit (presque) plus \u00eatre collante aux doigts. Au besoin, parsemer une ou deux pinc\u00e9es de gluten de bl\u00e9 (pas trop\u00a0!) sur le plan de travail lors du p\u00e9trissage manuel.
