R\u00e9server au frais.<\/div>\n<\/li>\n<li class=\"bu_cuisine_recette_prepa \"><span class=\"bu_cuisine_recette_prepa_etape\">2<\/span>\n<div class=\"\">Pour le bavarois rhubarbe mascarpone : \u00e9plucher et couper la rhubarbe en petits d\u00e9s, puis la cuire \u00e0 feu doux avec le sucre. Plonger la g\u00e9latine dans de l&rsquo;eau froide pour la ramollir. Quand la rhubarbe est cuite, la mixer finement. Puis ajouter la g\u00e9latine avant que le compot\u00e9e de rhubarbe ne refroidisse. Battre la cr\u00e8me liquide en chantilly, puis y incorporer la mascarpone et enfin la pur\u00e9e de rhubarbe refroidie \u00e0 temp\u00e9rature ambiante. Disposer sur le biscuit et r\u00e9server au frais.<\/div>\n<\/li>\n<li class=\"bu_cuisine_recette_prepa \"><span class=\"bu_cuisine_recette_prepa_etape\">3<\/span>\n<div class=\"\">Pour le bavarois fraise : mettre la moiti\u00e9 du coulis de fraises \u00e0 chauffer avec le sucre. Plonger la g\u00e9latine dans de l&rsquo;eau froide pour la ramollir. Quand le coulis de fraises est bien chaud, incorporer hors du feu la g\u00e9latine, puis verser dans le reste de coulis et laisser refroidir \u00e0 temp\u00e9rature ambiante. Battre la cr\u00e8me liquide en chantilly puis y incorporer le coulis de fraises. Couler sur le bavarois rhubarbe et r\u00e9server au frais.<\/div>\n<\/li>\n<li class=\"bu_cuisine_recette_prepa \"><span class=\"bu_cuisine_recette_prepa_etape\">4<\/span>\n<div class=\"\">Pour le miroir aux fraises : mixer les fraises puis les filtrer \u00e0 la passoire afin d&rsquo;\u00f4ter les p\u00e9pins. Porter l&rsquo;eau \u00e0 \u00e9bullition, puis ajouter l&rsquo;agar-agar et laisser bouillir 1 minute en remuant. Y ajouter le sucre, bien remuer ; enfin, incorporer le coulis de fraise.
