Lavez et essuyez le concombre.<\/p>\n<p>Tracez des sillons dessus \u00e0 l\u2019aide d\u2019un \u00e9conome. Coupez-le en deux dans la longueur, retirez les graines.<\/p>\n<p>Coupez les moiti\u00e9 en deux pour former quatre barquettes.<\/p>\n<p>2. R\u00e2pez l\u2019autre moiti\u00e9 du concombre. Mettez la chair dans une passoire, laissez \u00e9goutter puis pressez pour \u00f4ter l\u2019exc\u00e9dent d\u2019eau.<\/p>\n<p>3. &nbsp;Dans un saladier, m\u00e9langez la ricotta avec la chair de crabe, le concombre r\u00e2p\u00e9, la coriandre cisel\u00e9, l\u2019\u00e9chalote, une pinc\u00e9e de piment d\u2019Espelette, du sel et du poivre.<\/p>\n<p>4. Remplissez les barquettes avec la pr\u00e9paration. D\u00e9corez avec de la ciboulette, parsemez de quelques baies roses.
