{"id":2674,"date":"2017-11-04T21:38:43","date_gmt":"2017-11-04T20:38:43","guid":{"rendered":"http:\/\/ptitedukanette.fr\/?p=2674"},"modified":"2018-12-30T22:44:49","modified_gmt":"2018-12-30T21:44:49","slug":"croissants-dukan","status":"publish","type":"post","link":"https:\/\/dukanette.fr\/?p=2674","title":{"rendered":"Croissants Dukan"},"content":{"rendered":"<ul>\n<li>2 oeufs (l&rsquo;un d&rsquo;eux pour peindre les croissants)<\/li>\n<li>10\u00a0 CS de ma\u00efz\u00e9na<\/li>\n<li>4 CS de gluten de bl\u00e9<\/li>\n<li>3 cs de lait \u00e9cr\u00e9m\u00e9 en poudre<\/li>\n<li>5 CS d&rsquo;\u00e9dulcorant en poudre (adapt\u00e9 \u00e0 la cuisson)<\/li>\n<li>1 sachet boulang\u00e8re Vahine (ou levure fra\u00eeche)<\/li>\n<li>2 CS de cr\u00e8me Puleva 5% MG (vous pouvez le remplacer par du lait \u00e9cr\u00e9m\u00e9)<\/li>\n<li>1 yaourt \u00e9cr\u00e9m\u00e9 naturel (ou citron)<\/li>\n<li>Un flux de lait<\/li>\n<li>Un peu de sel<\/li>\n<li>Ar\u00f4me de beurre<\/li>\n<\/ul>\n<p><b><i>\u00a0<\/i><\/b>Nous chauffons le filet de lait et y diluons la levure et l&rsquo;ar\u00f4me du beurre (au go\u00fbt).\u00a0Nous m\u00e9langeons 6 CS de f\u00e9cule de ma\u00efs avec 3 CS de gluten et de lait en poudre, et faisons un volcan.\u00a0D&rsquo;un autre c\u00f4t\u00e9, nous battons l&rsquo;\u0153uf avec une pinc\u00e9e de sel et l&rsquo;\u00e9dulcorant et le jetons dans le volcan.<\/p>\n<p>Nous ajoutons \u00e9galement le lait m\u00e9lang\u00e9 \u00e0 la levure, et remuez.\u00a0Ensuite, battre la cr\u00e8me et le yogourt jusqu&rsquo;\u00e0 ce qu&rsquo;elle soit lisse, l&rsquo;ajouter et bien m\u00e9langer avec une fourchette.<\/p>\n<p>Quand bien m\u00e9lang\u00e9, ajouter le reste du gluten et la f\u00e9cule de ma\u00efs, et m\u00e9langer jusqu&rsquo;\u00e0 obtenir une p\u00e2te souple avec vos mains (si vous voyez que vous \u00eates colle toujours \u00e0 vos mains et vous ne pouvez pas p\u00e9trir \u00e0 la main, lui jeter un peu de f\u00e9cule de ma\u00efs , mais gardez-le \u00e0 l&rsquo;esprit puis en divisant le tol\u00e9r\u00e9).<\/p>\n<p>P\u00e9trissez et laissez reposer pendant une heure avec un chiffon humide dessus.\u00a0Ensuite, nous mettons la p\u00e2te sur du papier v\u00e9g\u00e9tal, et avec un autre papier v\u00e9g\u00e9tal sur le dessus, nous l&rsquo;\u00e9tirons \u00e0 l&rsquo;aide d&rsquo;un rouleau \u00e0 p\u00e2tisserie.<\/p>\n<p>Une fois \u00e9tir\u00e9, coup\u00e9 en triangles, et enrouler la partie la plus large \u00e0 la plus \u00e9troite, croissant de mise en forme, et les placer dans une plaque de cuisson recouverte de papier sulfuris\u00e9.\u00a0Badigeonner les croissants avec de l&rsquo;\u0153uf battu avec un \u00e9dulcorant, et laissons reposer 10 minutes avant de les peindre \u00e0 nouveau.\u00a0Une fois peintes pour la deuxi\u00e8me fois, nous les pla\u00e7ons dans le four pr\u00e9chauff\u00e9 \u00e0 200\u00ba pendant 20-25 minutes.<\/p>\n<p>Quand ils sont chauds, nous pouvons les baigner avec dukancilla et le laisser se solidifier.\u00a0en lui donnant une forme de croissant, et placez-les sur une plaque \u00e0 p\u00e2tisserie recouverte de papier parchemin.avant de les peindre \u00e0 nouveau.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>2 oeufs (l&rsquo;un d&rsquo;eux pour peindre les croissants) 10\u00a0 CS de ma\u00efz\u00e9na 4 CS de gluten de bl\u00e9 3 cs de lait \u00e9cr\u00e9m\u00e9 en poudre 5 CS d&rsquo;\u00e9dulcorant en poudre&hellip;<\/p>\n","protected":false},"author":1,"featured_media":2675,"comment_status":"closed","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"wprm-recipe-roundup-name":"","wprm-recipe-roundup-description":"","_jetpack_memberships_contains_paid_content":false,"footnotes":""},"categories":[2,4],"tags":[12],"class_list":["post-2674","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-recette","category-sucre","tag-croisiere"],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v27.2 -
