{"id":4925,"date":"2019-03-04T18:54:26","date_gmt":"2019-03-04T17:54:26","guid":{"rendered":"https:\/\/ptitedukanette.fr\/?p=4925"},"modified":"2019-03-04T18:54:40","modified_gmt":"2019-03-04T17:54:40","slug":"pain-gluten-et-proteines","status":"publish","type":"post","link":"https:\/\/dukanette.fr\/?p=4925","title":{"rendered":"Pain gluten et proteines"},"content":{"rendered":"\n<p><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>85gr poudre prot\u00e9in\u00e9e (milical pour moi) + pour se fariner les mains<\/li><li>110gr gluten<\/li><li>3 cs\u00a0<a href=\"http:\/\/www.proteinaute.com\/fiche_dukan\/lait_ecreme_en_poudre-21.html\">l<\/a>ait \u00e9cr\u00e9m\u00e9 en poudre<\/li><li>1 sachet de\u00a0levure boulang\u00e8re<\/li><li>1 verre \u00e0 moutarde de lait \u00e9cr\u00e9m\u00e9 liquide<\/li><li>1 cs d&rsquo;\u00e9dulcorant<\/li><li>1 pinc\u00e9e de\u00a0sel<\/li><li>1\u00a0oeuf<\/li><li><strong>Falcutatif<\/strong><\/li><li>Ar\u00f4me<\/li><li>Graines de pavot<\/li><li>Graines de s\u00e9same<\/li><\/ul>\n\n\n\n<p>Diluer la levure dans le verre de lait.<\/p>\n\n\n\n<p>Mixer le lait \u00e9cr\u00e9m\u00e9 en poudre.<\/p>\n\n\n\n<p>Y ajouter 75gr de la poudre prot\u00e9in\u00e9e, 100gr du gluten, la pinc\u00e9e de sel l&rsquo;\u00e9dulcorant, les graines si vous le souhaitez.<\/p>\n\n\n\n<p>M\u00e9langer.<\/p>\n\n\n\n<p>Creuser un puit au centre, y ajouter l&rsquo;oeuf, l&rsquo;ar\u00f4me si vous le souhaitez et y verser un peu du m\u00e9lange lait+levure.<\/p>\n\n\n\n<p>M\u00e9langer (\u00e0 la main de pr\u00e9f\u00e9rence)<\/p>\n\n\n\n<p>Ajouter encore un peu du m\u00e9lange lait+levure, m\u00e9langer&nbsp;; jusqu&rsquo;\u00e0 y avoir mis tout le lait.<\/p>\n\n\n\n<p>Ajouter les 10gr restant de poudre prot\u00e9in\u00e9e et les 10gr restant de gluten.<\/p>\n\n\n\n<p>P\u00e9trir \u00e0 la main 5 bonnes minutes en se farinant les mains \u00e0 l&rsquo;aide de la poudre prot\u00e9in\u00e9e pour \u00e9viter que la pr\u00e9paration ne colle trop.<\/p>\n\n\n\n<p>Former une boule, la \u00ab&nbsp;lancer&nbsp;\u00bb \u00e0 plusieurs reprises dans le saladier.<\/p>\n\n\n\n<p>Laisser reposer 45min sous un torchon dans le saladier.<\/p>\n\n\n\n<p>Former une baguette et la placer sur du papier cuisson sur la plaque du four.<\/p>\n\n\n\n<p><br>Enfourner 20min \u00e0 160\u00b0.<\/p>\n\n\n\n<p>V\u00e9rifier la cuisson, et rajouter 10min par 10min jusqu&rsquo;\u00e0 obtention de la cuisson d\u00e9sir\u00e9e.
