{"id":5095,"date":"2019-06-18T22:26:25","date_gmt":"2019-06-18T20:26:25","guid":{"rendered":"https:\/\/ptitedukanette.fr\/?p=5095"},"modified":"2019-06-18T22:26:25","modified_gmt":"2019-06-18T20:26:25","slug":"risotto-citronne-au-saumon-et-au-crabe","status":"publish","type":"post","link":"https:\/\/dukanette.fr\/?p=5095","title":{"rendered":"Risotto citronn\u00e9 au saumon et au crabe"},"content":{"rendered":"\n<p><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>250 g de\u00a0riz\u00a0sec de konjac<\/li><li>250 g de chair de\u00a0crabe\u00a0frais (tourteau) cuit par vos soins (ou en bo\u00eete)<\/li><li>100 g de filet de\u00a0saumon<\/li><li>1\u00a0oignon\u00a0rose finement hach\u00e9<\/li><li>2 gousses d&rsquo;ail\u00a0d\u00e9germ\u00e9es finement hach\u00e9es<\/li><li>1\u00a0citron\u00a0jaune, zeste r\u00e2p\u00e9 et jus<\/li><li>1 litre de\u00a0bouillon de volaille all\u00e9g\u00e9\u00a0chaud<\/li><li>2 branches de\u00a0thym\u00a0frais \u00e9miett\u00e9<\/li><li>1 cuill\u00e8re \u00e0 soupe d&rsquo;huile d&rsquo;olive<\/li><li>ar\u00f4me beurre<\/li><li>2 cuill\u00e8res \u00e0 soupe de\u00a0parmesan\u00a0fra\u00eechement r\u00e2p\u00e9( croisi\u00e8re )<\/li><li>sel,\u00a0poivre<\/li><li><\/li><\/ul>\n\n\n\n<p>Versez le&nbsp;bouillon&nbsp;de volaille dans une casserole, portez-le \u00e0 \u00e9bullition et maintenez-le ensuite au chaud \u00e0 petit feu.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>Faites cuire le filet de saumon sal\u00e9 environ 7 min \u00e0 la vapeur, il faut le garder moelleux.&nbsp;R\u00e9servez&nbsp;au chaud.<\/p>\n\n\n\n<p>Dans une sauteuse faites chauffer l&rsquo;huile d&rsquo;olive <\/p>\n\n\n\n<p>.Versez l&rsquo;oignon&nbsp;hach\u00e9 et faites revenir doucement jusqu&rsquo;\u00e0 ce qu&rsquo;il soit tendre, ajoutez les gousses d&rsquo;ail. Remuez. <\/p>\n\n\n\n<p> Cuire le konjac comme indiqu\u00e9 sur l&#8217;emballage et laisser \u00e9goutter . Versez le jus de citron et le\u00a0zeste\u00a0r\u00e2p\u00e9, m\u00e9langez bien.<\/p>\n\n\n\n<p>Ajoutez le&nbsp;bouillon&nbsp;de volaille une louche \u00e0 la fois, m\u00e9langez et ne rajoutez du&nbsp;bouillon&nbsp;que quand tout est absorb\u00e9. La cuisson prend environ 18 min, ,  . N&rsquo;h\u00e9sitez pas \u00e0 go\u00fbter.<\/p>\n\n\n\n<p> Pour finir rajouter le riz, ajoutez le thym et le parmesan, m\u00e9langez bien. Salez, poivrez.<\/p>\n\n\n\n<p> Versez le crabe et le saumon, m\u00e9langer une ou deux minutes, \u00e0 feu tr\u00e8s doux, pour r\u00e9chauffer la chair de crabe.
